Here’s a great weeknight meal, creamy sundried tomato sauce over juicy chicken – the entire family will love it!
When I create recipes, my main goal is to make them QUICK and super easy. Being a working Mom, there is no time to mess around…as much as I would adore a day spent in the kitchen, it’s just not happening in this season of life.

Creamy Sundried Tomato Chicken
Ingredients
- 4 pcs thin sliced chicken breasts
- 1/2 c favorite marinade (I used lemon pepper from Whole Foods)
- 1/2 c chopped sundried tomatoes, drain oil
- 2 cloves garlic, minced
- 1/2 c white wine (I used pinot grigio)
- 3/4 c heavy cream
- 1/2 c parmesan, grated
- 2 tsp dijon mustard
- 1 shallot, sliced
- 3/4 c chicken broth
- 1 tsp Italian seasoning
- 1 Tbsp cornstarch
- 1 Tbsp water
Instructions
- Marinate chicken in your fave dressing for 2hrs (30min is ok too!)
- Bake chicken at 425 degrees for 20-25min
- While the chicken bakes, cook garlic and shallot in a drizzle of olive oil in a large skillet over medium high heat
- Stir in white wine, simmer a minute
- Mix in dijon, chicken broth, cream, parmesan, sundried tomatoes + italian seasoning
- Simmer on medium low 5min
- Mix together cornstarch and water then stir into sauce
- Season with salt + pepper
