Back in carline, back into our routine. Sofia was out of school sick last Thurs/Fri then they had off yesterday. While the slow mornings were great, I’m very glad to be back on schedule!
Sofia was at a playdate on Saturday, so Mike and I took advantage of the beautiful weather. It’s been a pretty gloomy winter…or maybe it’s normal for Charlotte!? My body is not used to it. Winter in FL is pristine and we had 5yrs of that gloriousness! Anyways, we sat on the front porch in the sun then moved into the grass on a picnic blanket and soaked up the sun.
Saturday night was filled with the usual, take-out and Yellowstone. I’m on the final season! Not sure what I’m going to watch next. Send me some ideas!!!
Sunday I was busy in the kitchen and did a few loads of laundry. I made a veggie soup. Mike and I’s fave sushi restaurant in FL has the best veggie soup so I tried to recreate it. Just threw in a bag of broccoli/cauliflower, bag of snow peas, onion, Napa cabbage, mushrooms, carrots, celery, loads of garlic then topped with veggie broth and let simmer until the veggies were tender. We’ve been eating the leftovers for lunch this week. For dinner I made baked ziti. Very into comfort foods at the moment.
I’ve been collecting pieces to add to my wardrobe for Spring. The idea of adding a few special pieces for each season gets me excited for what’s to come. I was talking with my Mom and I have a habit of “saving” all my nice things for the perfect day. No more. I’m ready to wear the eff out of all the stunning pieces this spring! 🙂
Weekly Find: I grabbed these sandals which I plan to wear on repeat. Also grabbed this white button up, it looks perfectly soft and flowy!
Here’s what we’re cooking this week!
MONDAY: sausage, egg + cheese sandwiches w/ hash browns
TUESDAY: veggie chili (recipe hitting the blog this week!)
WEDNESDAY: butter + garlic noodles with shrimp scampi and broccoli
THURSDAY: cauliflower crust pizza w/ salad
FRIDAY: out
Hope you have a great week!
