Weekend Edition | Ding, dong, ditch + Lasagna

Welcome to another week! We started it off a bit different than usual. Sofia had her first remote learning day, so she was up in her room getting work done. Mike was working from home in the downstairs office and I was upstairs in my office. It was a full house and definitely threw me off of my schedule!

I need to give a big shout out to Mike and his friend for working on our yard this weekend – it got aerated, a fresh layer of mulch + seeded. Next up, I need to spray neem oil over all of the plants then we should be good to go until Spring!

Sofia had a playdate Saturday night and they were being kids and ding dong ditched our neighbor a few doors down. They were not happy! OMG. I felt so bad but like also, they are 10yr olds, it happens. Anyways, we baked them cookies and Sofia wrote an apology note and we walked over hoping for the best. They ended up being the coolest and even invited Sofia over to checkout the animals in their backyard whenever she wants. 🙂

Sunday was the first time in ages Sofia had no cheer, so I decided to bake a big lasagna. My sister and I are obsessed with the lasagna from Epcot, so I made it that way, with béchamel instead of ricotta. The leftovers today were glorious!

Here’s what we’re cooking this week!

MONDAY: nuggets chopped up over a salad (Sofia has hers with Mac + cheese and green beans)
TUESDAY: crispy roasted chicken thighs, chimichurri rice (from Trader Joes) + broccoli
WEDNESDAY: hamburger steaks w/ onions + gravy, mashed potatoes + French beans
THURSDAY: slow cooker black bean soup
FRIDAY: out
