Light + Creamy Veggie Chowder

It’s January. Everyone is all about healthy eating but I’m also like…let’s make it comforting too! This is a light broth-y veggie soup with a touch of cream to give it that cozy feeling. Loaded with veggies you will feel awesome after eating it. Feel free to swap out or add in any of your favorite vegetables!

Light + Creamy Veggie Chowder

Course: Main Course

Ingredients

  • 1 onion, chopped
  • 2 carrots, choppped
  • 2 celery stalks, chopped
  • 2 russet potatoes, peeled + chopped
  • 2 zucchini, chopped
  • 3/4 c flour
  • 2 bay leaves
  • 1/2 tsp seasoned salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cartons 32oz chicken broth
  • 1 c half + half cream
  • 4 pcs microwavable bacon
  • olive oil

Instructions

  • In a large stock pot or dutch oven, drizzle olive oil and heat over medium-high
  • Add the onions, carrots, celery + zucchini and cook 5min or until tender
  • Sprinkle the flour over the veggies and stir for 1min (to cook out the flour taste)
  • Slowly stir in the broth and bring to a boil for 5min
  • Reduce to a simmer, add in potatoes + all the seasonings and bay leaves and let cook covered for 15-20min (until the potatoes are tender)
  • Turn off the heat, stir in the half and half and toss out the bay leaves
  • Top with crumbled bacon
