Weekend Edition | #1 Costco Buy + Optimism Book

Hope you had a great weekend!

We were back home in Charlotte. Back to Sofia’s Friday night private tumbling lesson. Gymnastics Saturday. Relax Sunday.

After gymnastics on Saturday we ran into Costco. I only had a few things on my list and we walked out with a packed cart! I ended up grabbing a small baked ham, scalloped potatoes and maple dijon glazed carrots for Easter dinner. OH, tip! We always grab the double bag of the grated parmesan there (Cello brand). I freeze one bag and dump the other into a lidded mason jar to store in the fridge. It’s the best parm for the price!!!

This weekend we tried to spend as much time outside as we could. Spring in NC is divine. I pulled out some cookbooks and poured a glass of wine for a little multi-tasking happy hour! I also fertilized and added mint compost to my Earth Angel rose bush. Very excited to see how much it grows this season – she’s 1yr old 🙂 We met with a landscape designer the other week and waiting to get the designs back so just tending to my one little plant has me SO ready for everything to come! We are going to pull up the plants in the front and put in limelight hydrangeas. Going for a very vineyard meets English countryside vibe!

Sunday night Sofia got her finger slammed in the patio door. The draft between the garage door and the back door is insane. It was still bad Monday morning so we took her to the dr then to get x-rays. Luckily her bones + tissues were all fine. Just some bruising to deal with.

Weekly Find: to be honest, lately I’ve been trending on the pessimistic/a-holey side of the thought spectrum and wanted to do something about it stat. Picked up The Tough-Minded Optimist book by my favorite author (Dr. Norman Vincent Peale) – his book, power of positive thinking was what got me on my spiritual journey 8yrs ago! Highly recommend if you need to pull yourself up into a life of excitement!!!

Here’s what we’re cooking this week!

MONDAY: One Pan Italian Shrimp + Rice (added a splash of cream and parmesan to ours)
TUESDAY: spring salad with bacon and topped with feta dressing
WEDNESDAY: greek pita pizzas with tzatziki and a cucumber tomato salad
THURSDAY: nuggets, homemade Mac + cheese and French beans
FRIDAY: out
