Weekend Edition | Cinnamon Chip French Toast + Fall Vibes

We enjoyed our first proper “cooler” weather weekend!!! Saturday was gorgeous, clear skies, crisp in the morning and evening, total perfection. Mike took the car for an oil change then we ran to the farmers store – we wanted to show him where we’ve been spending so much time (and $$$) 😉 I picked up a few things to make homemade chicken and rice soup. Oh, I also had beef bone broth simmering in the crockpot all day – filled the house with such a home-y aroma! Anddd we made French toast with cinnamon chip brioche bread from the local farmers store. We seriously have an addiction. Sofia said it feels so calm and relaxing in there. I think that the old timey vibe and fresh produce give it a very grounding effect, brings you back to a time when life was a lot less hectic.

We woke up to rain on Sunday. It was a very Fall type of day. Cloudy, drizzle, cool. I lit all the candles and made chicken and rice soup, laundry, meal planned and Sofia had cheer. Mike watched football and Sofia snuggled in her bed watching Twitches on Disney+ (she’s watched just about every Halloween movie they have!)

OMG. I have been meaning to discuss Virgin River!!! Have you seen it? It’s on Netflix. Season 5 just came out. I started watching it the other weekend and got absolutely hooked. It has a Hallmark type of feel-good-positive-vibe. Everyone is so loving even while they are all going through their own issues. It’s just one big community that acts like family. It’s really really really good!

Here’s what we’re cooking this week:

MONDAY
spaghetti + turkey meat sauce w/ salad
TUESDAY
sheet pan chicken fajita bowls (I don’t really follow the recipe, just use the same cooking temp/time and mix sliced chicken breasts, bell peppers, red onion with Siete taco seasoning)
WEDNESDAY
pimento + ham grilled cheese (using a pimento cheese spread we picked up at the farmers store ;))
THURSDAY
garlic shrimp, rice + broccoli (we ran out of the garlic seasoning from Hawaii so I ordered more direct from HI. It is 10000000% worth it!)
FRIDAY
