Weekend Edition | Pool Party + House Update

Ok so our week didn’t start out on the best note. We were supposed to have our inspector go into the house today for the pre-drywall inspection – per the builder it had to be today. Well the builder emailed this morning asking to push it back until the end of the week because they weren’t done (the inspector was going to charge an extra $100 to change the date!).
I truly do hate to complain but after quite a few setbacks it’s frustrating. Anyways, everything seemed to end up working out ok today. Fingers crossed from here on out it’s smooth sailing because this Mama is ready to get the eff out of the tiny rental. My sanity needs it, especially with Sofia home for the summer, ha!
On to a more positive note: over the weekend our community had a pool party, you guys, this party was insane! They had a legit DJ, all kinds of food (seared ahi tuna, wontons, sliders, pizza etc), drinks (typical water soda etc but also red, white + rose wine, beer and Trulys). We were v impressed with the setup!
Sofia’s last day of school is Wednesday, we are very much looking forward to slower mornings and NO packing lunches!!!

MONDAY: Gingery Chicken Jasmine Rice Bowl (just stir-fry a veggie mix, heat + slice a grilled chicken breast, microwave some frozen rice, mix it all together in a bowl topped with sesame ginger dressing)
TUESDAY: Chili Chicken + Black Bean Tacos (heat + slice a grilled chicken breast *can even sprinkle some taco seasoning on it while you heat it, heat up some black beans, sauté a sliced red bell pepper until tender, warm tortillas in the microwave for a few seconds, put together tacos!)
WEDNESDAY: Marinara Ricotta Ravioli w/ Baby Mushrooms (cook Kite Hill spinach ricotta ravioli per instructions, slice a container of mushrooms then sauté with oil until tender, heat up your favorite marinara then mix it all together)
THURSDAY: Sesame Ginger Beef + Asian Salad w/ Rice (cook a broccoli slaw mix on medium-high with oil until tender and set aside, cook 1lb of ground beef until browned and set aside then heat up some microwavable rice, add it all into a bowl and top with sesame ginger dressing)
FRIDAY: Out
