Ok, this is definitely comfort food with the heavy cream + all the parm!
*You could totally swap out the shrimp for diced chicken as well. Be sure to serve with rice so it can soak up all the creamy sauce – yum!
Creamy Cajun Shrimp + Rice
Ingredients
- 1 lb medium peeled + deveined shrimp
- 3 tsp tony chachere's creole seasoning
- 2 Tbsp butter
- 1 shallot, diced
- 3 cloves garlic, minced
- 1 c heavy cream
- 3/4 c good quality, freshly grated parmesan
- handful parsley, chopped
Instructions
- in a large skillet, melt butter and a drizzle of olive oil over medium high heat
- stir in shrimp + creole seasoning and cook 5-6 min or until they turn pink
- remove from the pan and add in another drizzle of olive oil then cook the shallot and garlic for a minute
- lower heat and stir in cream, bring to a boil then simmer until it has thickened *about 10min
- stir in shrimp + cheese
- serve over rice and top with parsley
