in a large skillet, melt butter and a drizzle of olive oil over medium high heat
stir in shrimp + creole seasoning and cook 5-6 min or until they turn pink
remove from the pan and add in another drizzle of olive oil then cook the shallot and garlic for a minute
lower heat and stir in cream, bring to a boil then simmer until it has thickened *about 10min
stir in shrimp + cheese
serve over rice and top with parsley
