You all cool with me keeping recipes short and sweet? I’m not one for paragraphs of info on how I made this recipe, what the weather was like as we ate it + how it made us feel – if I’m posting it then that means it was amazing! 😉
Here you go!
|INGREDIENTS|
- 1 Bunch tuscan kale, sliced into ribbons
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 1 red bell pepper, diced
- 2 (32oz) cartons chicken broth
- 1/2tsp turmeric powder
- 1½tsp salt
- 15oz can white beans, drained and rinsed
- 4 celery stalks, sliced
- 1 small bag of broccoli florets
- 1 rotisserie chicken, shredded
|DIRECTIONS|
- in a large pot heat oil over medium-high heat and sauté onion, celery and carrots + bell pepper, for about 5min until tender
- stir in the chicken stock, turmeric, white beans, salt + pepper; bring to a
boil - add shredded rotisserie chicken, cover and simmer for 20min
- add kale + broccoli (I usually microwave the broccoli in the bag for a few minutes so it’s somewhat tender), cover and simmer 5min

- 1 whole rotisserie chicken, shredded
