Chicken, Kale + White Bean Soup

twist on classic chicken noodle

Ingredients

  • 1 bunch tuscan kale, sliced into ribbons
  • 1 onion, chopped
  • 2 carrots, peeled + chopped
  • 1 red bell pepper, chopped
  • 2 cartons (32oz) chicken broth
  • 1/2 tsp turmeric powder
  • 15 oz can white beans, drained + rinsed
  • 4 celery stalks, sliced
  • 1 bag broccoli florets
  • 1 whole rotisserie chicken, shredded

Instructions

  • in a large pot, heat oil over medium-high heat and sauté onion, celery, carrots + bell pepper, for about 5min until tender
  • stir in the chicken stock, turmeric, white beans, salt + pepper, bring to a boil
  • add in shredded rotisserie chicken, cover + simmer for 20min
  • add kale + broccoli (I like to microwave the broccoli in the bag for a few minutes so it's tender), cover + simmer 5 more min
