Chicken Tortilla Soup

Quick weeknight soup that the family will love!

Cuisine: Mexican

Ingredients

  • 1 onion, chopped
  • 1 poblano pepper, take seeds out + chop
  • 2 small zucchini, chopped
  • 2 32oz cartons of chicken broth
  • 1 14.5oz fire roasted diced tomatoes
  • 1 rotisserie chicken, shredded

Instructions

  • drizzle olive oil in a soup pot over medium-high heat
  • cook onion, zucchini and poblano pepper until tender, 5min
  • pour in chicken stock, tomatoes w/ juice, season w/ salt + pepper and bring to a boil
  • cover + lower heat to a simmer for 10min
  • stir in chicken
  • serve with cilantro, avocado, tortilla chips + shredded cheddar
