Chicken Tortilla Soup
Quick weeknight soup that the family will love!

- 1 onion, chopped
- 1 poblano pepper, take seeds out + chop
- 2 small zucchini, chopped
- 2 32oz cartons of chicken broth
- 1 14.5oz fire roasted diced tomatoes
- 1 rotisserie chicken, shredded
drizzle olive oil in a soup pot over medium-high heat
cook onion, zucchini and poblano pepper until tender, 5min
pour in chicken stock, tomatoes w/ juice, season w/ salt + pepper and bring to a boil
cover + lower heat to a simmer for 10min
stir in chicken
serve with cilantro, avocado, tortilla chips + shredded cheddar
